Fudge Frosting

2 cups powdered sugar

½ tsp. salt

1 tsp. vanilla

¼ cup milk, scalded

3 T. melted margarine

2 oz. unsweetened chocolate

Directions:  Combine powdered sugar, salt, vanilla.  Add milk and mix until sugar is 

dissolved.  Melt chocolate and margarine together.  Add to sugar mixture and beat to 

spreading consistency.

Comment:  Sometimes more powdered sugar is needed to thicken.

Strawberry Pie

1 qt. strawberries

1 cup sugar

Pinch salt

2 level T. cornstarch

1 cup boiling water

2 T. strawberry gelatin

2 tsp. butter

1 baked pie crust

Directions:  Combine sugar, salt cornstarch, and boiling water.  Let it come to a boil, 

and then cook two minutes, stirring constantly.  Remove from heat.  Add butter and 

strawberry gelatin.  Stir well.   Cool slightly.  Fold in berries.  Pour into pie crust.  

Chill.  Top with whipped cream.

Comment:  May need a drop or two of red food coloring.

Rice Krispie Treats

1 cup Karo syrup      

1 cup sugar

1 cup peanut butter        

6 cups Rice Krispies

½ pkg. chocolate chips        

½ pkg. butterscotch chips

Directions:  Heat Karo Syrup and sugar until it becomes a rolling boil.  Take off 

immediately to avoid becoming peanut brittle!  Add peanut butter and blend.  Pour 

mixture over Rice Krispies and mix well.  Pour into greased pan.  Cool.

Melt chocolate and butterscotch chips together.  Blend.  Spread over Rice Krispie 

treats.  Cool.  May need to refrigerate the cookies briefly to set chocolate.  Cut in 

squares.

Peanut Butter Kiss Cookies

1 ¾ cups flour

½ cup peanut butter

1 egg

½ cup sugar

½ cup margarine

½ tsp. salt

1 tsp. baking soda

½ cup brown sugar

2 T. milk

½ tsp. vanilla

1 package chocolate Hershey Kisses

Directions:  Sift together flour, salt, and baking soda.  Set aside.  In a mixing bowl, 

cream together butters and sugars.  Add egg and vanilla.   Add flour mixture, 

alternating with milk. Form dough balls, roll the balls in sugar and place on an 

ungreased cookie sheet.  Bake at 375 degrees for 10-12 minutes.  After baking, 

lightly press a chocolate kiss into the center of the cookie.

Sweet Potato Casserole

8 yams - fresh

1 cup brown sugar

1 stick butter

15 ½ oz. can crushed pineapple

Miniature marshmallows

Directions:  Wrap yams in foil.  Bake for one hour at 350 degrees.  Skin should 

easily come off when finished baking.  Mash the skinned yams.  Mash in butter, 

brown sugar, and pineapple.  Pour into greased casserole dish.  Add layer of 

marshmallows on top.  Bake at 350 degrees until marshmallows melt.
